Surprisingly delicious, easy to make, with a hint of healthiness!
Preheat oven to 350F and line baking sheet with parchment paper.
Combine flour, cinnamon, baking soda, and salt (and cocoa powder if using) in a small bowl.
Beat butter and sugar in large mixing bowl until light and fluffy.
Beat in egg and vanilla.
Add shredded zucchini and mix.
Slowly add flour mixture and stir.
Stir and oats, nuts (optional), and chocolate pieces.
Place spoonful of dough onto prepared baking sheets.
Bake for 9-11 minutes; until edges are dry and golden brown.
Cool on rack and store in airtight container at room temperature.
