These peanut butter cookies are totally incredible to taste and are tender enough to taste everyone’s taste buds!
Preheat the oven to 375 degrees F.
In a bowl, add 1/4 cup of granulated sugar and set aside.
In another bowl, mix flour, pudding mix, baking soda, baking powder, xanthan gum, and set aside.
Beat butter, palm shortening, and both sugars together until light and fluffy.
Beat in egg and vanilla until the mixture turns smooth.
Gradually whisk in the flour mixture until well combined.
Now, scoop a tablespoon of this dough and roll into a ball. Repeat the same with the rest of the dough mixture.
Place the balls on a greased baking sheet and place them all evenly spaced at 2 inches apart.
Transfer the sheet into a fridge for 10 minutes.
