The marmalade used in these quick and easy to prepare cookies works as a wonderful alternative to sugar!
Preheat the oven to 180 degrees C and line a baking sheet.
Sift flour, guar gum, baking powder, salt together in a bowl and set aside.
Beat together butter and egg until smooth and whisk in marmalade until combined. Add dry ingredients and beat until well blended.
Drop rounds of this batter on the baking sheet and bake until the cookies are lightly browned.
Cool and enjoy!
